Being inspired by Morphy is always a good thing! He's one of the best chess players of all time. I've been looking at his games lately and I feel like they're really helping me improve.
I like your explanations of white's poor plan with Nf3-e5-d7. I agree completely. He moved three times to take your bad light-squared bishop.
Nice work exploiting the weak a6 pawn. Very logical and strong play.
As you mention, g3 is very weak. By the end, you controlled most of the board. Very nice!
I think the main thing about this game is that white, as you mentioned, wasted a lot of tempi with his knights.
