Interesting video.

I tried to check how I evaluate the positon of the first game you showed and came up with the following process:
1.) looks wild, probably a position to look for tactics
2.) white seems to attack (queen looks aggressive)
3.) whites queen is attacked
4.) only white piece that actually seems aggressive is the queen
5.) blacks king is in the centre but seems safe
6.) black has (half) open g/h file
7.) probably black is attacking....2.) seems to be wrong
now I started to look at moves:
Qc7/Bd6...threatens check on h2...h-file is open...idea of pinning the queen to the king...doesnt work. N and Q protect h2
...Ne4/..Nf4 for black...whites pieces seem to be cramped/tied down
black has problems with the Bc8 and Ra8
ok...white to move...queen is attacked, where can she go..she has to leave the h-file because of ...Rh8, which leaves Qg5 as only square but discovery possible
8.) Wait Nf6 is hanging...nwo and after discovery
9.) Why cant I take ?
10.) Insert calc here (too lazy now)
11.) Decide between Qg5 and Qxf6

Did that pretty quickly (1 min maybe) so dont be surprised that there are no calculations...just a glance at the position.

After that I listened to your analysis and was quite surprised that you started with counting pawns and identifying good/bad bishop. But makes sense if you organize your thought via SECA. I just wonder why include "identify opening"...think that isnt important..maybe even hindering/limiting your thoughts as you might go for "Ah, its opening X, so lets check for the standard plans"

EDIT (Qxf6 keeps bugging me) :
OK, decided to calc a bit:
1st) 16. ? Ne4 / Nxe4 dxe4 and the Nf3 must move
2nd) 16. ? Nf4 / attacks the B on e2 and threatens Rxg1+ (follow up? too lazy now)
3rd) Probably 16. Qxf6 fails to Nf4 after 17. g3 Nd2+ and probably there might be some sac ideas on g3 (too lazy now) ? -> dont take on f6
4th) ok, just go for Qg5 then (lazy^^) protects g1 / pins Ng6

You should hide the next move, comments and outcome if you do this exercise. It's a bit hard not to look down accidentally, because the video screen is so small.

13:30 - I think if 1.Qh6 Black wins the Queen with 1...Rh8 2.Qe3 Bh2+ 3.Kh1 Bf4+ (3.Nxh2 Qxh2 ++). If 2.Qg7 Rh7!! 3.Qxf6 and again Bh2+ is mate or wins the Queen. 2.Qg5 is the same as 2.Qe3.

20 - Nxf2+ wins the Q

21 - Rh8 is mate :D

Unfortunately I saw Qg5 in the info box, but since all other moves trap or lose the Queen/material in 2 or 3 moves there wasn't much to calculate I guess.

Like GW said, the first thing you should probably do in S is look for hanging pieces. You don't want to spend your time counting pawns if you can just take a Knight. Identify opening should probably be "identify general type of position via pawn structure" for example IQP, e5-pawn chain, Slav structure etc. If you know these structure you will automatically have a few candidate moves/strategies in your head (like a c5-break in the e5 chain or a e5 break in the Slav.), which is more helpful than identifying the opening, which will be impossible much of the time anyway.
